The Quarantine cookie

While we all are at home we might find ourselves a little bored. Some maybe watching a marathon of TV shows and others maybe working at home.

Today, I decided to bake cookies and these cookies are vegan. Sometimes I find myself making vegan cookies better than regular ones. I try to cater to the whole family and this is how I figured out that they were just as good or even better. No but really I’m gonna have to take a bow for this one. These cookies are great! So I decided to share my recipe.

Vegan peanut butter oatmeal cookies

Vegan peanut butter oatmeal cookies

Preheat oven 350f

Yields 75 cookies


Step 1

Measure and mix together all the dry ingredients in a mixing bowl

1 ½ c flour

3 ½ c old fashioned oatmeal

3 Tbs corn starch

1 Tbs baking powder

1 tsp salt

1 tsp cinnamon


Step 2

Cream together in a separate bowl with a hand mixer

1 tsp vanilla

1 Tbs white vinegar

2 sticks vegan butter country crock

1 c peanut butter

1 c brown sugar

1 c white sugar

½ tsp xanthan gum

1 can coconut milk

1 Tbs white vinegar


Step 3

Using a hand mixer incorporate both bowls of ingredient.

Optional~

Vegan chocolate chips

Raisins

Coconut flakes

Freezing Cookie dough

Step 4

Refrigerator cookie dough for one hour or pre-make the cookie dough into balls with a cookie scoop and put them on a lined cookie sheet with parchment paper and put the cookie sheet right into the freezer for 15 minutes. Start to work on the next pan of cookies while the first pan of cookies are in the freezer. Alternating while baking.



Scooped cookie dough

Freeze for 15 minutes

Bake for 15 minutes

Remove from the cookie sheet and put them on a cooling rack.
