Jumpstart your stuck metabolism

For some people the older we get the harder it is to lose weight and I’m one of those people. Really this just fell into my lap. My husband would always say if you eat a quarter of an apple after you eat it’ll help you digest your food faster. He started adding apple cider vinegar every day after dinner. Then people started noticing his weight loss.


At this point I started making my own kombucha and I started researching fermented foods.


Kombucha

Kombucha all around is awesome aka “elixir of life“ Adding this to your daily diet is beneficial to your skin, stomach and heart. Full of Antioxidants and Probiotics. Reduces the toxins in your body, turning bad bacteria into good bacteria. Along with helping you maintain the sugars in your blood. Great for type 2 Diabetes. May help protect you from cancers. Immune system booster.


Pickled watermelon rind



My biggest weight loss kick is this crazy thing called pickled watermelon rind.

So Interesting to say my picked watermelon rind is pretty delicious. Tastes just like a pickle. Texture is different so for those who don’t like the seeds in pickles this would be great for you. I could see me adding pickled watermelon rind to a plate of cheeses and salami.


So really of course there’s health benefits In eating watermelon rinds. The rind possesses large percentage of nutrients, low calories and high content of Vitamin A, Vitamin C, potassium, Vitamin B6, B12 and zinc. It is loaded with citrulline, chlorophyll, amino acids, lycopene, phenolic compounds and flavonoids.


Great for your blood pressure health, strengthens immune system, Prostate health, skin health, weight loss aid and libido.

Libido all on it’s own is great for your sexual health and is a Aphrodisiac. Which will stimulate your sexual desires.


Filled with cancer fighting lycopene nutrients.

In order for you to get the most nutrients from your watermelon you should eat it in raw form.


So refrigerator pickled watermelon rind will hold your most nutrients. Other than this literally the rind is inedible unless boiled for an hour then pretty much tasteless until pickled.


So one of the biggest kicker to fermentation is sugar. Which can be confusing because sugar makes you gain weight and is the main reason for a muffin top. During your fermentation your sugar is eaten away. Leaving you with pure goodness.


Sanitize all your equipment and canning jars


Refrigerator Pickles


Prepare the rind by removing most of the pink from the rind cut into 1” squares and fill your quart jars. Set aside


Combined in a large saucepan

2 cups water

1 1/2 cups sugar

1 cups apple cider vinegar or white distilled vinegar

1 cinnamon stick

1/4 tsp cloves

1/4 tsp all spice

1/2 tsp red pepper flakes


Slowly cook and stir until sugar is dissolve. Let cool and then pour over each canning jar. Put the lids on and refrigerate for 3-4 days before eating

Refrigerate up to 7 to ten days.

Sanitize all your equipment and canning jars


Canning Watermelon Pickled Rind

Day 1

Prepare the rind by removing the pink and the skin from the rind cut into 1” squares.


Soak over night in cold water and 1 cup of vinegar in the refrigerator. Drain


Day 2

Fill a boiling pot with the rinds and 1 cup of vinegar and fill your pot with cold water until the rinds are completely covered. Boil for an hour. Drain


Prepare 6-8 canning jars by adding a 1/4 tsp of Pickle Crisp Granules in the bottom of each jar.


Prepare the liquid in a pot

1 cup water

4 cups white distilled vinegar

5 cups sugar

1 Tbs whole allspice

1 Tbs whole Cloves

4 cinnamon sticks

1 Tbs red pepper flakes (optional)


Bring to a slow boil until sugar is dissolve.


Using a canning pot fill with water and starting to heat the water.

Fill up the canning jars with the rinds and then pour hot liquid until covered. Lightly screw lids on after wiping the tops of each jar making sure it’s clean. Insert each jar into the canning pot and cook for ten minutes. Remove from pot onto a clean towel and wait until you hear each lid pop. Tighten lids.


You can start eating the rinds within the first two days. As of every thing we eat you should refer to your doctor especially for those who can’t have potassium.
